Oatmeal Raisin Chocolate Cookie Recipe

These cookies provide a healthy, luxurious change to your standard oatmeal raisin cookies. With whole wheat and steel cut oats, each cookie provides you with additional fiber. Substituting egg whites and low fat margarine made with plant sterols makes these cookies heart healthy. Chocolate provides a little touch of luxury.

Ingredients

  1. 1 cup low fat margarine softened
  2. 1 cup brown sugar
  3. 1/2 cup white sugar
  4. 4 egg whites and 2 teaspoons of oil
  5. 1 teaspoon vanilla extract
  6. 1 1/2 cups whole wheat flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon ground cinnamon
  9. 3 cups steel cut oats
  10. 1 cup raisins
  11. 1 cup crushed chocolate bits

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a large bowl, cream together the margarine, brown sugar and white sugar. Beat in the egg whites and oil, two egg whites and one teaspoon of oil at a time then stir in the vanilla. Combine the flour, baking soda and cinnamon; stir into the creamed mixture. Blend in the oatmeal and chocolate bits. Drop by rounded spoonfuls onto the prepared cookie sheet.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  4. Enjoy!

Note: For extra fiber, use cup of raisins and cup of chopped prunes.

  10. 3 cups quick cooking oats
  11. 1 cup raisins

Directions

  1. In a medium bowl, cream together low fat margarine, white sugar, and sugar in the Raw. Beat in egg whites and oil, 2 egg whites and 1 teaspoon of oil at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats and raisins. Cover, and chill dough for at least one hour.
  2. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
